THE RELEASE
The Founder’s Cask is drawn from Cask 01, the first laid down by founders Michael McLaughlin and Will Fellowes, marking the beginning of The Outback Distilling Co.’s Pioneer’s Collection.
Matured in a first-fill Oloroso sherry cask seasoned for more than 30 years, the whisky develops depth, colour and structure under the extreme conditions of Outback Queensland.
Individually numbered and finite, each bottle reflects the intensity of arid-ageing in the Australian Outback.
Once Cask 01 is gone, it will not be repeated.

NOSE
Sweet ginger, honey syrup and sandalwood.
PALETTE
Warm stewed fruit, velvety almond and vanilla cream with gentle spice.
FINSIH
Lingering sweetness balanced by measured oak and subtle tannin.
NOSE
Marmalade and sherbet lift first, giving way to soft spun sugar sweetness. Dense, sweet currants offer dried-fruit depth with hazelnut and warm cinnamon weaving through a delicate trace of candy wax.
PALATE
A whisper of liquorice opens into stewed fruit and boiled lollies, layered with hazelnut and spice. The oak influence is restrained and dusty rather than assertive, framing elegant Christmas cake spice, dense oat cakes, and raisin.
FINISH
Long and spice-led, with hazelnut, cinnamon, raisin and spun sugar caramel holding through to a gently dusty, oak-shaded close.
