Most distilleries work to control their environment. We work with ours.

Our bond store ranges from around 12–15°C in winter to 34–35°C in summer, with daily temperature swings of 15–20°C. As temperatures rise and fall, the spirit moves into and out of the oak, drawing colour, flavour and structure from the cask.

Summer drives deeper interaction with the wood. Winter gives the spirit time to settle and integrate. Repeated over years, this rhythm builds layers of depth and complexity.

Ex-Bourbon casks provide structure, while Oloroso layers dried fruit, richness and spice.

Add a single large ice cube if preferred. As it slowly melts, new aromas and softer spice begin to reveal themselves.
