Native Dry Gin is built from botanicals that are genuinely at home in the Outback. Saltbush, bush lemon, desert lime and lemon-scented gum grow in-region and on our property, shaped by heat, drought and seasonal extremes.

Desert limes fruit for just six weeks each year. Picked too early, they’re too bitter. Left too long, a summer storm can strip the ripening fruit from the tree. We harvest them by hand and freeze them immediately to protect their brightness.

The result is bright citrus and saltbush minerality, with aromatic depth from lemon-scented gum, bay leaf and rosemary.

Martini, dirty or classic 

Cold, crisp and beautifully savoury.

Stir 60ml Native Dry Gin with 15ml dry vermouth over ice, then strain into a chilled cocktail glass. Add 15ml olive brine for a dirty martini, or keep it classic with a lemon twist.

Silky, aromatic and made for slow sipping.

LEMON & ROSEMARY SPRITZ

Zesty, aromatic and refreshing.

Pour 45ml Native Dry Gin over ice with 15ml fresh lemon juice and 15ml rosemary syrup. Garnish with lemon and a sprig of rosemary or saltbush.

Bright citrus, gentle sweetness and a crisp herbal finish.

GIMLET

Bright, zesty and refreshing.

Shake 60ml Native Dry Gin with 15ml fresh lime juice and 15ml simple syrup over ice until well chilled. Strain into a chilled cocktail glass and garnish with a lime wheel.

Crisp citrus, gentle sweetness and a clean, balanced finish.
