THE SPIRIT
Native Dry Gin from The Outback Distilling Co. captures the refined side of the Australian Outback. Built on precision and balance, it layers bush lemon and desert lime with savoury native botanicals including saltbush, lemon-scented gum, bay leaf and rosemary.
Desert limes fruit for just six weeks each year. We harvest them by hand and freeze them immediately, preserving their brightness for year-round production.
Awarded Gold at the 2025 London Spirits Competition, Native Dry Gin is a structured, savoury-leaning gin designed for those who value clarity, balance and authenticity in the glass.
PALATE
Saltbush minerality with bay leaf and rosemary, layered over clean citrus.
